ICGA Culinary Quality project

A professional restaurant sensory and service assessment scheme with documented applications, eligibility review and assignments with an agreed scope.

About the project

The displayed weights provide the assessment framework. The criteria version and decision threshold must be documented and communicated to the restaurant before an assessment is agreed. An application alone produces no pass decision or certificate.

Working process

  1. Eligibility review and agreement to participate
  2. Assessor training, calibration and conflict disclosure
  3. Two visits on different dates with specified repeated samples
  4. Evidence review by a person not involved in the visits

Assessment scope

Assessment covers sensory characteristics and guest service at the agreed site and within the agreed scope. Food safety, allergens, halal status, statutory hygiene ratings and educational qualifications are outside this scope. Operators remain responsible for permits and legal compliance.

Apply for a professional role

Applications are open for assessment, decision review and independent appeals roles. Competence, training and conflicts are reviewed before an appointment agreement is prepared. Both parties must accept and sign before an actual assignment.

Governance and fees

Assessment, decision review and appeals are separate functions. Fees and expenses must be set out in a written offer accepted by the applicant before work starts. This page collects no payments.

Document verification

Verify an application receipt, declaration record or appointment agreement version by QR or verification number. Verification shows record status and digest; an unsigned document or received application does not confer appointment or certification.
